Sounds like a lovely plan. (And now I want dumplings.)
A yogurt dip sounds the most likely of the three to go well with the tomatoes, too. That said, I tend to reach for soy sauce and vinegar based things when looking to dip dumplings.

The farmshare ham is very very salty, I was reluctant to use soy sauce with it.

This sounds delicious, but even I wouldn't be feeding easter ham leftovers to guests unless I'd frozen them just after easter. ;-)
