I got Richard (and me) to like sweet potatoes by cutting them into wedges and roasting them with salt, pepper, and olive oil. Kind of like what I do with winter squash. And carrots. It must be an orange thing. :)
Roasted veggies, yummm. Parsnips are really good that way too. I'd never had a parsnip until I tried a recipe that roasted them alongside carrots. Delish. Like a cross between regular potatoes and carrots.
