it was 111 degrees today and this heat is just KILLING ME. its down to 104 but thats still too hot to function.

needless to say, due to the heat, i am NOT up for cooking. what can i make thats simple, cheap, COLD and delicious? my husband isnt vegan but if it tastes good, he will eat it. i just cant bring myself to turn the stove on. :(

recipes, suggestions, no heat necessary

chips and salsa! also, with a ton of fruit. that's typically what i love on a hot day and dont wanna cook.

1 banana, frozen or not, depending on what you have, but frozen=better.
A dollop of peanut butter
cocoa powder (optional)
Protein powder, wheat germ (optional)
Vegan omega or flax seed oil (optional)
enough non-dairy creamy beverage of your choice (vanilla, chocolate or plain, rice, soy, hemp, oat, or almond) to make it blend smoothly
Maybe some agave/maple syrup/sugar if you add cocoa and it isn't sweet enough.

mmm thanks a lot. My smoothies always lean towards fruity and this is inspiration in another flavor-direction.

Bagel sandwiches or tortilla wraps! I usually use fake meat (duh), but falafel is good, too. I also add red peppers, onions, cucumbers, lettuce and sofrito and tabouli as dressings on either side of the bagel or bread. If you have vegan cheese that's also good, especially if you have it on the side on top of sliced Fuji apples.

Tomorrow night is going to be baba ganoush, taboulleh, and hummus with pitas. I barbequed the eggplant once the sun went down tonight (and my mom wondered what a vegetarian was going to do with her old gas grill) and I'll mix it up with tahini, lemon and garlic in the morning. Taboulleh and hummus are already made.
