chop the mango into bite-sized pieces, put them all into a plastic ziplock or plastic container, and freeze. you can use it in the future for smoothies or baked goods.

Recipe:
1 c mango juice
1/3 c oil
1 1/2 t vanilla
1 t vinegar
2 T cornstarch
1 1/4 c flour
3/4 c sugar
3/4 t baking soda
1/2 t baking powder
1/4 t salt
mango chunks
Combine oil, juice, vinegar, vanilla in bowl. In another, combine cornstarch, salt, flour, sugar, baking soda and powder. Mix wet into dry. Add the chunks. Bake at 350 for about 20 minutes. The oven at work cooks weird l, so you might want to check earlier. They came out almost like cornbread. Like I said, the oven is weird, so yours might come out differently.
