try using a vegetable broth; i prefer the Pacific brands that you can find at whole foods. low sodium and i WANT to say organic but wouldn't stake my life on it.
also, maybe try using a different beer, or a half bottle of one, the next time? i know that guiness makes for a delicious ANYTHING when used in the crock.
