Dinner!

I'm trying to use up the older meats in my freezer I defrosted some marinated pork loin last night. Decided I should crockpot it - I mean why not? Learning to use my crock, so the more I use it, the better I get at it. Combined the following in my 4qt crock:

3 pork chops (2 inch thick)
6 red potatoes (Quartered)
1 Cup baby carrots (Approx.)
1/2 Sweet onion
1 Tbsp minced garlic
1 bottle of beer (It was an IPA)

Put on high for 4 hours, then low for 2. The pork was a little dry (Remedied with a little of the cooked down beer). Next time I'll just cook it on low all day (Threw it in at 2, so it was later than usual - hence the high!) The carrots and potatoes a touch over done - but not mushy - just softer than I liked. Next time I will probably use beef or chicken stock - it was a little to beerish for my taste. (I got the beer for a party and figured I should use it up - so I cook with it instead of drinking it. Did corned beef the other night with another can of beer)

Overall - definitely a success! Tweek it a little for next time. More carrots, garlic and onions. Broth instead of beer and on low all day. Was a nice change have a substantial meal instead of just scrounging.
