Think long and hard about LTC insurance. There's been some major shifting in the market with some key players, and a lot have gotten out. Rates are also up, way up. Make sure that you are talking to agents who really really know these products!

Just my $.02, of course. Take it for what it's worth!

The pasta-sausage-pesto thing sounds DELICIOUS. Did you post the recipe for that yet?

Happy early birthday to SO. Ugh to all the expenses, though!

There isn't a recipe for that one; I made it up! *g* The basil pesto recipe is posted. I don't have the garlic scapes pesto recipe to hand to post that, but IIRC it was similar to this one. About 1/4 cup of the basil pesto, maybe 1/3 cup of the garlic scapes pesto; 1 lb. penne pasta; 1 lb. sausages simmered till cooked, then cut into half-rounds; 1 large yellow bell pepper sliced, slices cut in thirds; 1 medium red onion sliced in quarter-rounds; 2 medium zucchini sliced in half-rounds; 3 medium roma tomatoes chopped in 1/2" pieces. I sauteed the sausage slices in one skillet, the pepper, onion, and zucchini in another (in a little olive oil), while boiling water for the pasta and then cooking it. Drained pasta and tossed with the two pestos, then with the cooked veggies, sausage, and tomatoes. Pretty easy!

My SO makes a version of this with veggie sausage that is awesome -- older son hates veggie sausage when he can tell what it is, but he can't tell if it's meat or not mixed in with enough peppers. *g*

*nods* Yes, I'm sure it would be good with veggie sausage too; I would make it with pork sausage if it were just for me, but use chicken or turkey sausage for SO. ;-)

You could cook the sausage as crumbles too, instead of simmering and slicing.
