Touhou was created by ZUN. Every single photograph or video of him has him holding alcohol of some form. He has a blog dedicated to alcohol. He really loves alcohol.

Persona 3 was created by ATLUS, who seem to have a strange obsession with daddy issues and tentacles.

Narita Ryohgo was asked by his editors to write YAOI PORN for an April Fool's issue of a novel magazine. He was unhappy with the prospect, but damn. The illustrator of the novels is quite the IzayaxNamie shipper, and has tweeted about Namie on various occasions. Narita and Yasuda serial tweeted to each other during the Anime's run.

Akimine Kamijyo doesn't seem to have any particular quirks and works consistently.

IDK about Psych's creators specifically, but everyone they bring to their Comic Con panels seems delightfully crazy. There is usually singing and dancing involved.

Digital Devil Saga is by the people who brought you the Persona games, and they like to kill God a lot. I don't feel like I need to know more than that to gauge their sanity.

Temeraire is a by Naomi Novik, a BNF who began Temeraire as an epic Master & Commander fanfic that went so AU and OOC that she realized it was a new story. She still writes American Idol porn regularly.

How To Train Your Dragon was directed by the dudes who did Lilo & Stitch. I know one of them has a DA account where he posts lots of nearly-naked hula girls.

Black Butler has the amazing Yana Toboso, who trolled the heck out of her fanbase with the whole second season of the anime, posts fanart of anime-only characters in bondage gear on her blog for funsies, and spent her formative years before beginning Black Butler at age 22 drawing lots and lots of BL.
