"Give it a Name" by At The Drive In has a reference to "The Cask of Amantillado" by EA Poe.
"Biomusicology" by Ted Leo + The Pharmacists references T.S. Eliot's "The Waste Land" ('oed und leer, das meer...or something along those lines that I'm too lazy to look up)
The Allman Brothers had the album Eat a Peach, in reference to Eliot's "Prufrock," but I don't recall if there's a reference in any of the songs.
Richard Buckner did a whole album called The Hill using only text from Edgar Lee Master's Spoon River Anthology.
They Might Be Giants - "I Should Be Allowed To Think" references Ginsberg's Howl

"White Rabbit" by Jefferson Airplane: Alice in Wonderland
"One" by Metallica is loosely based on Dalton Trumbo's "Johnny Got His Gun"
And of course, the Masters of Lit-Rock: IRON MAIDEN:
"Phantom of the Opera"
"Murders in the Rue Morgue"
"Rime of the Ancient Mariner"
"Stranger in a Strange Land"
