no acid in the boiling water? not authentic ukrainian recipe, but my lebanese g-grandmother used to put in a splash of lemon juice.

Hmm. No, no mention of acid. Any idea what the acid does? Colour preservation? Tenderizing?

Probably a little of both of those. I feel like it might 'brighten' the flavour a little, too; but that could have been something else about they way she made them, I suppose.

My sister in law brought over some of their family recipe and it didn't come close to our family recipe so it has got me thinking I want to make them someday. Granted I think yours sound even better. Ours is Ukrainian/Jewish so excluded bacon and was beef and rice. Bacon makes everything better.

Most of our family recipes are for food that will generally give you heartburn and are actually quite awful but the cabbage rolls were great. Ours were sweet and sour and tasted a lot like a good tart cabbage borscht. I think I may have written it down when I was much younger and might still have it somewhere.

The next best I ever had were at Rascals in Florida before a deli chain bought it deliberately to remove the competition. they had a thick sauce that included raisins.

For your entertainment: I actually found the recipe I wrote down over thirty five years ago when I got it from my Mom and much of it is gone or unreadable. Transcribed exactly as written. I also have no idea if she added cooked or raw rice! Its a fairly simple recipe though except I am impressed that my Mom put an onion in the blender. She wasn't a gourmet cook :)

Chalupchis

Can stewed tomatoes
Can tomato sauce
equal parts of white sugar and vinegar (3 to 4 tbsp) [NB or brown sugar and lemon]
cut up 1-2 onions and a green pepper
Put another onion in the blender
mix pureed onion, 1 cup uncle bens converted rice and mix with 2 ¼ lbs of ground beef in a bowl
