Wanted to jot this down, after having got the instructions from my mom on the phone:
To prepare the cabbage leaves for Holubtsi:
Core the cabbage - be sure to get the whole core!
Boil whole in large pot of water
As leaves turn dark green and loosen from head, remove with tongs and rinse in cold water.
For leaves with thick ribs, you can trim the rib
Stack, place in bags, and freeze until ready to use.
Man, I love holubtsi. My mom's recipe is filled mostly with rice that's been flavoured with bacon, onions, salt and pepper. The rolls are covered in tomato sauce and stacked. And the very best way to eat them is fried in oil, so the cabbage on the outside gets nice and crisped. Mmm! I'll post the whole recipe when that time comes (hopefully Christmas?) but for now, just how to make the leaves.
