Lately I have been making far too much food. Even though it's only my mom and I... serving sizes lie! These recipes make enough to feed an army. So, we only have one new meal every day or so, because the leftovers are usually enough.

a) i made the salmon today. it turned out yummy. the boy gobbled it up.

b) can u tell me what you changed about the risotto? the recipe as is looks kind of iffy. feta?! *cringes*

c) you need to teach me about pot roast before you leave.

Risotto -- I don't have feta so I used parmesan, but I just put it on top and if the rice is still warm it will mix in fine and you can adjust how much you want. I also used diff veggies -- green beans, carrots, green peppers, onions, some garlic, celery, and broccoli. The celery and green beans are a must, I think, because they are greaaaaaaaat in terms of texture. I also halved the recipe and instead of all chicken broth I did like half chicken broth and half plain soy milk because I thought that milk would make it creamier. You can use regular milk, though, I'm sure. I needed a little more liquid than the 3/4 or so cup that halving the recipe gives you. And lastly I didn't have arborio so I used regular short grain Japanese rice, and that was fine. 1 cup of rice for my mom and I made like 3.5 - 4 servings, although it was more of a side.

I have a slow cooker, so the pot roast was just browning the beef, putting in all the seasonings and putting it in the slow cooker.
