cooking for a family of four

Lately I have been making far too much food. Even though it's only my mom and I... serving sizes lie! These recipes make enough to feed an army. So, we only have one new meal every day or so, because the leftovers are usually enough.



Tuna noodle casserole, which I think could use more tuna. Instead of melting, some of my cheese decided to burn. Bastards.



Pot roast and fuuuuull of veggies risotto. My first time making risotto! My mom doesn't usually like risotto, but she liked this~~~ it was super super good.



Fish/potato/tomato soup (this recipe mixed with my own messing around to make it more tomato-y) with avocado-shrimp salad with ponzu ftw.

I think I'm going to be kind of sad when I don't have pretty much unlimited time to think about what I want to cook anymore.

I used to think baking was easier than real cooking, but since I am serially incapable of following directions strictly, I now see that I was completely wrong. These days I substitute/add/omit to my heart's content, and nothing turns out too badly.
