I've zone cooked a few times - it's a wonderous experience, isn't it?

It really is a wondrous experience. I've cooked for big holidays before, sure, but this was just one of those rare perfect times when everything unfolds just the way you hope it will. You don't have to think; you just have to be in the moment.

And I'm impressed with your mad cooking skills! I never have to fix dinner for more than two people, and when I do, it's usually something easy ... we're lucky if I remember to cook a veg along with the main dish. Thank you! I enjoy cooking, but yeah, being single means that I don't get to cook big meals like this very frequently, and it does often feel like too much fuss to do something this complicated. I do cook something special for myself sometimes, usually on the weekends so that I can portion out the leftovers and have them for quick dinners during the week, when I might not be home until 9 or 10.
But I do relish times like last night, when I can just cook and know that people will be able to enjoy it. That's just fun.

Thank you! I feel like I need one of those fancy, neatly-pressed aprons. I can wear it with my pearls. ;-)

I'd love the cucumber cashew salad recipe, if you can share it - I am drowning in cucumbers.

I'd be happy to share the recipe! It's a wonderful use for extra cucumbers. I'll have to do a recipe post.
