Would it be overly ambitious to tackle cooking something like goose for christmas dinner? The thing is I have never done it, and don't know whether people would like it. If you can get your hands on it Pheasant is good. Duck tends to have a lot of fat in it. Definetly a good idea to have a back up just in case;). Ham...oooor...maybe even chicken?

I have made pheasant before and it was divine - but I don't think I'd be able to find any. We're not big on ham, but hubby loves duck and I have had some that's been absolutely delicious. Because it's fatty the trick is definitely cooking it right. Risky? Yes.

As a likely consumer of said experiment, I vote for whichever option includes the backup entree.

Plus, that option = more leftovers! :)

For sure, eight grownups and two munchkins. Possibly another two grownups and one voracious teenager will drop by, but they probably won't be there for the meal.
