Would it be overly ambitious to tackle cooking something like goose for christmas dinner? The thing is I have never done it, and don't know whether people would like it. But if you're going to try to cook something like that, you really need to have a lot of people to feed for an excuse.
Or perhaps, duck (smaller) and something else that I know people definitely like (like a beef roast or something)?
