What is your favorite brand of vanilla? I bought a big bottle of Nielsen-Massey vanilla this spring and I have been really happy with it, but it's almost gone. I recently made french vanilla cupcakes. They were good, but I used one vanilla bean for 2 dozen cupcakes, as the recipe called for, and could barely taste it. You can see the speckles in the cupcakes, and smell the vanilla, but the taste is very light. I'm afraid adding another vanilla bean would be too much (and vanilla beans are so expensive!).
