My mom brought a friend's Taste of Home magazine home with her one day, and I just had to make this recipe...
These cupcakes are delicious! They're definitely VERY sweet...I tried one without any frosting straight out of the oven and it tasted perfect. The frosting is very good, though. Even my brother, who is a very picky dessert person, loved them! Enjoy =)
Cookie Dough Cupcakes
1 recipe white cake batter (I just used a boxed mix)
1/4 cup butter, softened
1/4 cup brown sugar
2 T. granulated sugar
1/3 cup all-purpose flour
1/4 cup powdered sugar
1/4 cup mini chocolate chips
Prepare your favorite white cake mix or a boxed mix as directed. Set this aside (DO NOT BAKE IT YET!). In a separate bowl, mix the butter, brown sugar, and granulated sugar together. Beat in flour and powdered sugar. Stir in chocolate chips. Fill paper-lined cupcake cups half full with the white cake batter. Place a tablespoon of filling in the center, then cover with remaining white cake batter. Bake at 350 degrees for 17-22 minutes.
Buttercream Frosting (note: I made a half recipe of this and it made more than enough for the cupcakes)
1/2 cup butter, softened
1/2 cup shortening
4 1/2 cups powdered sugar
3 tablespoons milk
1 1/2 teaspoons vanilla extract
Cream the sugar, shortening, and butter together in a mixing bowl. Add milk and vanilla until creamy.
