Be aware that oatmeal often hides wheat gluten. Check the label carefully.

Even if the label doesn't *say* wheat gluten, oats are often cross-contaminated with gluten. If you want to be sure, purchase oats specifically marked as gluten-free. At least, this is true in the U.S.

You are an *AWESOME* roommate! I'm going to put these on my todo list! Thank you!

Detoxinista and Against All Grain (both have blogs and Facebook Pages) are *GREAT* resources.

I'm a celiac but grains in general make me itch so I am grain free and I went egg and dairy free for a year to confirm that I wasn't also having a problem with them and the Detoxinista and Against All Grain saved my palate :) Both have alternatives for any 'iffy' ingredient like eggs and dairy if they include them.

Try looking up recipes under "autoimmune protocol". Here's some to get you started:

As someone mentioned earlier make sure you buy oatmeal that's labeled gluten free to make sure there hasn't been any contact with wheat.
I can personally vouch for the second link, cookies, as I've made them a few times before and they were well received.

I have a lot of friends with allergies, and I like The Allergen-Free Baker's Handbook (link goes to Amazon). All the recipes are gluten, wheat, dairy, egg, soy nut, and sesame -free. You might see if your library has it :)

I love Jennifer Katzinger's gluten free vegan cookbooks, especially Flying Apron's Gluten-Free and Vegan Baking Book. I have celiac disease and a dairy allergy, and a dear friend is allergic to wheat and eggs, so that book is one of my treasured resources. Her bread and pie books are also fabulous.
