Filled Cupcakes: An excursion in tip futility

I had two occasions to bake cupcakes this week and after viewing some videos on youtube I managed to bite off more than I could chew. It all started with a birthday party. I'm a horrible cupcake froster too. I've gotten a tad better with practice, but mostly it's awful. So I feel your pain.

HOWEVER. I learned a method that works for those of us that are frosting inept. It's foolproof. I use a 1M tip, though any of the big ones seem to work. Take your piping bag and face it straight down on the cupcake and push, slowly coming up. https://www.youtube.com/watch?v=jQsAeUG_ZJM Is where I got the technique from, it's like the second last one she does, starts about 2:10. It's cute and I got all kinds of compliments on a bunch of cupcakes I decorated using it.

It's hard to tell from your first pic, but it actually looks like your frosting might be too soft to hold a good shape for frosting with a tip. Is it from a can, or did you make your own? (What's the recipe?)

Because other than that, from what it looks like, you have the general idea down. (Again, hard to see, especially with the coconut.)

I used a can of frosting for this and it held the shape just fine, my technique was more of the issue.

Have you ever tried doing it with a stiffer/homemade icing?
Even good cupcake frosters sometimes struggle with canned ones for frosting cupcakes using a tip, because it's not really the right consistency.

Doesn't matter what the frosting on top looks like; people will still eat it, so don't worry about it. We eat with our mouths a lot longer than we eat with our eyes.
