This cake is absolutely incredible, y'all. Why must you have so many delicious recipes? I'll never have the time to make them all! (Or the metabolism to eat them all. LOL.)

Haha!! I think I'd probably eat it all, though! I need to wait until I have a group to feed, or I will snarf down that whole cake myself. Might be a good one to make for Thanksgiving. Could you make it ahead of time and keep it on the counter/in the fridge? Cover it to keep it moist? Maybe wait to frost it before serving?

Yes, just cover and tuck it in the fridge until you're ready to eat, and then frost and serve. You can refrigerate it with the frosting, too, but if you do, let it sit out for about 25 minutes before serving so it'll get soft.

This looks splendiferous. I was curious if you used fresh coconut here, or it doesn't matter? I have a lot of dedicated coconut and this might be a good recipe to use some of it up.
