Hi, bakers!  I have two almost-full boxes of Kashi GoLean cereal that I'd like to use up via baking, because I'm not a fan of the taste at all and I can't find anything that helps it ( Read more... )

I don't see why you couldn't use it as a granola substitute in, say, a cookie recipe. I've used Go Lean as part of the crumble of an apple crisp, a blueberry crumble, and as a yogurt topping. You could use it as the same for any recipe that has a crumble topping :)

Haha, right? I like other Kashi cereals so I figured I'd buy this while it was on sale... poor decision right there.

You could try making Rice Krispie treats with it. So they'd be Kashi GoLean treats. All that marshmallow and butter ought to make it taste better!

Looks like there might be some puffed rice type cereal in that mix? If so, it might make an okay substitution for the cereal in Ranger cookies (this was the closest online recipe I could find to my grandmother's recipe, but if you use it definitely take into account the comments and cut back on the flour they say to use). These cookies have never failed to be a hit when I've taken them to events.

I suggest a Ranger Cookie, too. This is the recipe I have used for 30 years (learned it in 8th grade cooking class).

1/2 c shortening
1/2 c granulated sugar
1/2 c brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
1 c unbleached flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 c quick cooking oats
1 c wheat or corn flake cereal (the Kashi could go here)
1/2 c shredded coconut (optional, I have never used it)

Heat oven to 375 F. Mix thoroughly shortening, granulated sugar, brown sugar, egg, and vanilla. Stir in remaining ingredients. Makes a very thick dough. Add 1-2 teaspoons of water if necessary.

Drop dough by rounded teaspoonfuls 2 inches apart onto baking sheet (I use parchment paper to make sure nothing sticks). Bake 10 minutes (ovens vary). Immediately remove from baking sheet.

By the way, do you know how many this makes? A few similar recipes double everything and have ~7 dozen, so I'm assuming it's maybe half that.

I knew I should have added that. It makes about 3 dozen. I usually double the recipe. And I only add the water if the cereal makes it too dry. With flake cereal, if you crush it a bit, the dough will be drier than if you don't.
