Hi, bakers!  I have two almost-full boxes of Kashi GoLean cereal that I'd like to use up via baking, because I'm not a fan of the taste at all and I can't find anything that helps it ( Read more... )

I suggest a Ranger Cookie, too. This is the recipe I have used for 30 years (learned it in 8th grade cooking class).

1/2 c shortening
1/2 c granulated sugar
1/2 c brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
1 c unbleached flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 c quick cooking oats
1 c wheat or corn flake cereal (the Kashi could go here)
1/2 c shredded coconut (optional, I have never used it)

Heat oven to 375 F. Mix thoroughly shortening, granulated sugar, brown sugar, egg, and vanilla. Stir in remaining ingredients. Makes a very thick dough. Add 1-2 teaspoons of water if necessary.

Drop dough by rounded teaspoonfuls 2 inches apart onto baking sheet (I use parchment paper to make sure nothing sticks). Bake 10 minutes (ovens vary). Immediately remove from baking sheet.

By the way, do you know how many this makes? A few similar recipes double everything and have ~7 dozen, so I'm assuming it's maybe half that.

I knew I should have added that. It makes about 3 dozen. I usually double the recipe. And I only add the water if the cereal makes it too dry. With flake cereal, if you crush it a bit, the dough will be drier than if you don't.

This is my grandmother's recipe exactly! The coconut is really awesome and I never leave it out; sometimes my mom would add chopped pecans as well.

I don't have coconut or pecans, but I was thinking about chocolate chips since I just bought a bag... thoughts?

I actually tried them with chocolate chips the last time I made them, and to be honest it's one of the only times I thought the chocolate was an unwelcome addition. They weren't bad, but certainly not as good as they are without the chocolate.

Actually, we use half a bag of mini chocolate chips in the cookies. My kids (and I) love them. I don't think I would use the full size chips because the dough is so dry but the mini ones worked well.

Oh, good idea! I actually did end up making these with Kashi but without chocolate chips, and they were yummy, so I'll have to try chocolate chips next time.
