i acquired two zucchini over the weekend and need to do something with them before they go bad, so this is a. perfect, and b. timely. i mean, i love zucchini bread, and i've never made zucchini muffins.

is there something i could substitute for the flax, tho?

Hey! This amount of flax replaces 1-3 eggs. So, if you're vegan there's: apple sauce, a banana, pumpkin purée, cornstarch, arrowroot flour, ener-G egg replacer, tapioca flour..I haven't eaten eggs in over 15 years (an intolerance) so I can't guarantee the number of eggs needed, ah, sorry about that <3

Can any egg-eaters help me out here? :)

i actually have the opposite problem - i'm not vegan and don't cook with flax, so i don't have any in my house and wouldn't know what to do with it if i bought it. but i also don't know what it's substituting for. so, eggs! which is helpful, thank you. :D

I just made these using 3 eggs instead of the flax and they turned out absolutely delicious!

This was a really good recipe that I definitely will do again. :)
