Some of my co-workers did pastry there and they have nothing but praise for the course :) unfortunately their class days didn't correlate well with my days off and they were really inflexible with me on the phone when I asked about recognition of prior learning (I have a cert 3 in retail baking) :( but I would have enjoyed going there, I think, apart from having to catch PT in with all my bags and toolkit! What certificate are you up to?

About 4 hours all up :) but that was with three ovens, endless supplies of mixing bowls/whisk attachments/etc in the classroom.

This is so beyond my level. It's actually kind of exciting to see how much I still have to learn. It looks like it was really freaking delicious too. Amazing job!

My teacher says that you never stop learning and he's been a pastry chef for 30 years and is still learning :)

It's actually a pretty simple handful of techniques once you've got a few basic skills down (like making meringue, making anglaise, that sort of thing).
