Thin Mint Scones

My boyfriend is a little crazy and bought 12 boxes of Thin Mints from a local Girl Scout. Much to my surprise, he asked me to find some recipes so I could use up some of the Thin Mints. I've been sitting on a recipe from King Arthur for mini chocolate chip scones, and thought I could easily modify it and sub in crushed up Thin Mints for the ( Read more... )

I don't think I've ever had a problem with "too many" Thin Mints in the house. With the possible exception of when I was a Girl Scout in high school and had crates of product physically in the house with me. And that was only "too many" because I had to pay for them myself at retail price if I wanted to eat them.

That said, cool idea!

LOL I'm glad someone at least can relate! I mentioned this to my boyfriend and he said the same thing - "honey, you said 'crush the cookies', so that's what I did"

My husband says the best recipe for Thin Mints is to ship them to him. He has graciously offered to accept any boxes your boyf wants to send along.

What a kind, generous husband I have.

In other news, I should probably find a girl scout so that he doesn't go steal them from his mother's house like he did last year.

We don't get Girl Scout cookies here in Britain so this is pretty unBritish I have to say!!

Anyone want to send some over??

(I had some in Seattle - apparently Thin Mints are good if you put them in the freezer and eat them cold!)
