Why use egg yolks instead of egg whites?
I'm curious because I've never seen a recipe that calls for yolks instead of whites lol.

Egg yolks are used in pudding recipes to make them thicker and richer. Also in some ice creams, sauces, mayonaise, creme anglaise etc. Think custard, which has lots of egg yolks.
