Zucchini oven fries

Be warned: these things are seriously addictive. I opted to dip mine in warm tomato basil pasta sauce, though I think ranch dressing would be another delicious (but not as healthy) alternative.

i've been told the texture is better on those without the peelings. how would you rate those you cooked with the peels on vs those parts without peeling?

To be honest, I couldn't really tell the difference. I didn't have anything that was stringy or tough. It could have been that it was super fresh (from the farmers market)?
