Last week I had a hankering for some mac 'n' cheese. I didn't feel like going grocery shopping or following some exact recipe, so I pulled stuff together out of the fridge/cabinets and made a version of mac 'n' cheese loosely based off the "recipe" for "What the F*** Ever Brownies" where you take roughly the ingredients needed for a recipe, toss ' ( Read more... )

I used low fat cheese and no butter, so I gave it the best try I could at low fat haha. So I'm hoping it's nutritionally better than regular mac n cheese!

Looks delicious! I thought you were going to puree the veggies and add them to the sauce... I have a recipe that calls for winter squash & it becomes part of the sauce.

I've seen another recipe that uses a puree as the sauce thickener... I think it's Rocco Dispirito -- he uses a garlic onion puree to thicken his sauce instead of roux.

i admit to not being much of a caulifower fan, but add it to mac&cheesy goodness and i am sold! (i love broccoli, so i'm a really easy sell there. :D ) also your directions are just really fun to read.

The veggies were so good covered in cheese! But you could definitely make it all broccoli if you wanted :)
