Thank you! I just use mashed fresh apple when I don't have apple sauce for granola. Honey or golden syrup are too sweet as substitutes. I would say the main function of apple sauce here is to bring in some liquid to help it roast. Other mashed fruit, like pear or banana, could also work well. Does that work?

It can be substituted for 50 g brown sugar plus 1 table spoon of water.
