Green Tea Macarons with White Chocolate Ganache

Well, I have seen all of the recent macaron recipes, and found them just inspirational!  I decided to take a whack at it myself, and  I think they came out pretty well!  The tops were not entirely smooth, because I ground the almonds myself, but the texture turned out great, and I was really pleased with how creamy the ganache turned out.

hi how do you measure 110g of egg white? and what would be a good replacement for silicon mats? these look great btw!
