Fruit Pie

My dad wants a pineapple pie for his birthday, and while I have found a few recipes, I wondered if anyone else could share one with me or at least point me in the right direction. My main concern is the crust, as my crusts typically come out badly.

I can't comment on the filling b/c cooked pineapple is so not my thing, but I have never had a bad pie with Jiffy Butter Pie Crust. It stays crispy even after the pie stands on the counter for 24 hours, but it's not hard. Just wonderful.

No matter which pie crust you choose in the end, the trick to a nice flaky pie crust is not to overwork it. Get the ingredient *just* combined, then chill it and roll it. The more you mess with it, the tougher it will get.
