It has a spicy, herbal, citrusy taste. Its really good in desserts, and its used a lot in middle east dishes. It tastes real close to All Spice (in my opinion, anyway) but its more musky. If that makes any sense.

Very. It may sound a little daunting, but its just whisking the egg yolks, then the egg whites, folding them together with the flour, add whatever flavorings you'd like, and then spreading onto a baking sheet. Then you spread it with whatever you'd like, and then roll! If you decide to try it and have questions, let me know! I'd be more then happy to help~

This looks amazing but every time I have to fold, I totally screw up. :(

I was taught to take my spatula, cut a line down the middle of the batter, and flop it over on top of the other half and then spin the bowl a little. It takes a little practice, but once you get the wrist flip its actually a little fun!

And if the sponge roll isn't as fluffy as you'd like, it still makes good snacking food!

Hmm, never heard of spinning the bowl a little. Maybe I'll attempt to give this another shot, haha. Thank you! :)

Go for it! When you fold it, fold it until you just barely see it all come together. More mixing means more loss of air, and air is what makes the sponge roll light and fluffy. And if you see some pockets of egg whites or flour still sitting around, that's fine.

If you have any more questions, feel free to ask!
