Brown Sugar Cardamom Rum Sponge Roll

Hello good people of bakebakebake!!!

I was sitting and watching TV when I realized. I was bored! So I figured i'd do a little baking. But then came the question of what? I wanted to make something a little different, something light and fluffy and not too sweet. So I thought for a second, and it came to me. Sponge roll! Cakey pillows of fluff that could be tailored to what I wanted, and they're entirely versatile!

So I made a Brown Sugar Cardamom Rum Sponge Roll. And its total yum!

Brown Sugar Cardamom Rum Sponge:
6 eggs, sepperated
1 cup brown sugar
1 cup flour, sifted
1 Tablespoon Rum
1 Tablespoon Cardamom

1 cup whipping cream
2 Tablespoons granulated sugar
1 teaspoon cinnamon
1 teaspoon all spice
1/2 cup chopped pecans (Optional)

Preheat oven to 325. Mix the egg yolks with the brown sugar to a 3 Second Ribbon (Down under 'Beating Egg Yolks'). Transfer to a big bowl. Clean mixer bowl and add egg whites. Beat to stiff peaks. Add Cardamom to flour. Fold flour/cardamom mixture and egg whites into the egg yolks. Fold in Run.

Spread mixture onto parchment covered sheet pan. Bake 15 minutes. Remove, and cool.

Whip the whipped cream with the granulated sugar. Add Cinnamon and All Spice. Spread half on cooled sponge. Roll and spread the rest of the whipped cream over the top. Sprinkle the pecans along the top. Cut the edges and arrange on platter.

I cut me a slice of this, made a cup of homemade chai tea, and oh MAN. I've never tasted anything so lovely! Absolutely perfect for what I was craving!!!
