Mango Cake Request

Hi all, I casually asked my boyfriend what kind cake he wants (should there be a special occasion) and he said he wanted mango cake. I know the most conventional form of mango cake is mango mousse cake but I was wondering whether anyone has a better recipe for something less.. conventional (sorry, call me weird, but I'm like this--I can't stand ( Read more... )

I will say that the raspberry buttercream was strong enough so that the mango wasn't the star (read about this in the blog post), but I think that's at least in part because of the HUGE HONKIN' BUTTERCREAM ROSE of icing on each cupcake. If you frosted them less aggressively (or used a mango frosting, even?), they'd be more mangoy. They were seriously delicious, though.

Oh yes -- this is actually my blog, so those are the ones I made in the photos. The cake was, as I mentioned, the BEST white cake I've ever had. I actually got it from They Way the Cookie Crumbles (http://www.crumblycookie.net/2009/07/01/white-cake-comparison-2/). I'd already heard good things about the Cooks Illustrated white cake and the Dorie's White Cake recipe, so I thought it was pretty ingenious of the Cookie Crumbles blog to combine the best parts of each one.

It had a fine crumb, was moist (so many white cakes seem like dry bricks), and had a great flavor.

Hmm maybe you can do a variation on the mousse cake with a complementary mousse or cake layer. Lime maybe?

I made a really quick match of mango sponge cakes once for a party we had, they don't rise a lot so wouldn't work as a large cake but were so very good in mini cakes.

Cut all the flesh of a mango, puree it and weigh it.
Use the same weight of butter/marge, sugar and flour.

Cream the butter and sugar.
Blend in the mango.
Add the flour and 1tsp baking powder per mango.

Cook in mini cake cases and ice with lime icing (icing sugar and lime juice).

They really were great!
