Bread Pudding, hold the wibble

I have a mountain of stale bread and a huge craving for bread pudding, but I have a few questions. I'm not really a fan of eggy custard type tastes, I prefer my bread pudding to be firmer and a bit cakier. I've looked through the recipes for bread pudding here, but I've never actually made one so I can't tell what's a good recipe to make sure it's ( Read more... )

Butterscotch Cappucino Bread Pudding absolutelyfatal February 25 2009, 01:47:35 UTC
I used a recipe in Gourmet magazine and made changes to it, so if you like cappucino and chocolate I hope you'll like this:

1 loaf stale bread, french is best.
2 tablespoons of Kahlua of Irish Cream liqueur (If you skip this add a bit of espresso in its place)
2 cups of milk
16 ounce cappucino, flavour you like(you can replce this with coffee that contains creamer if you like, the cappucino just gives a great flavour)
1/4 cup of brown sugar*
1/2 cup butter, melted
2 eggs, beaten
2 teaspoons vanilla
1/2 cup chocolate chips
1/2 cup butterscotch chips

Heat over to 350 degrees. Mix all ingredients together. Bake for one hour or until you get a really firm jiggle.

Note: I always put a few more chocolate chips on top with some toasted pecans. I also always pop on the broiler for just a few minutes(before the pecans and chocolate chips) to get a good toasting on top and it makes it a bit drier.

Just wanted to comment and say that I am also not a fan of "wibbly" desserts but have been meaning to try out a bread pudding, so I'm definitely bookmarking this entry. Also I love the word "wibbly" now haha.

I don't really know if this is what you'd be looking for, but my Crock Pot came with a bread pudding recipe that I tried [it's on the web http://www.crock-pot.com/Recipe.aspx?rid=409]. I used a really wheat-y, grain-y, dense bread (I don't know how else to describe it) and it didn't really come out like a "pudding" at ALL. But it went over really, really well. My SO brings it up every month or so and asks me to make it again.
