Huh, I was under the impression that Canon had better lenses (on the pro end at least) but Nikon tends to design better cameras. I would tend to avoid pouring a lot of money into a body, though; you can take just as good pictures with a $350 refurb Nikon D70 as you can with a brand-new $1500 Canon. And you don't have to worry as much about it getting stolen. And you definitely don't want spend so much on the body that you can't afford decent glass, since that does affect the quality a bit.
Data point: I shoot almost exclusively with a refurb D50 and a 50mm f1/8 lens; total cost (I think) around $500.
I have a Cannon and I love it (ease of use, quality, reliability, etc). I don't think there is such a thing as too much camera, most modern cameras can be used in a lazy mode where they do all the thinking for you and spectrum of modes all the way up to you do all the settings by yourself mode :)
