Hey.
Inspired by this post, I've decided to make a list of cheeses I have to eat before I die. I've had a lot, but I'm sure you guys can help me. What cheeses should make the cut? Try to think globally and make it about kinds of cheese, not brands.

I've had Bulgarian feta. It had a bolder flavor than regular Greek feta, as well as a slightly sour undertone. It was also quite salty, but very good.

I love Halloumi. There's this Greek restaurant I go sometimes and that's a staple every time. Just pan fried with some seasoned vegetables. Yum.
