I made buffalo chili last night. It was awesome. I took cubes of buffalo meat, tossed it in a bunch of spices and some flour, then browned it in my pot with some olive oil. The only heat-spice I use is a bit of chipotle. For the most part, it's like a good yellow curry, in that there's a LOT of flavour from lots of spices, but without setting your face (or your ass) on fire. It was rather like what a beef stew would be if you had a lot of chili powder and paprika in it. I can't take spicy hot-- even if it's mild enough that I can put it in my mouth, I'm not much of a fan of fiery rectum. My chili seasoning goes as such ( ... )

Goodness knows who, but I'm glad they weren't cooking me dinner last night! Mmm, good memories.

I'm so going to use that recipe again someday.
