I made buffalo chili last night. It was awesome. I took cubes of buffalo meat, tossed it in a bunch of spices and some flour, then browned it in my pot with some olive oil. Tossed in a pint of Boddington's to deglaze, then once it was simmering, added a box full of beef broth. Threw in a diced onion, bunch of garlic, a little worcestershire, a bit of brown sugar, some shredded carrots, and a diced orange bell pepper. I cut three tomatoes into eighths, and left them on the electric grill long enough for the skins to blacken a bit; tossed that in the pot too. Simmered it until all the vegetables had boiled away into nothing more than a little bit of unrecognizable chunky texture. It came out pretty tasty.
It annoys me that people from Not-Texas have this crazy idea that chili is supposed to have beans in it. Who started that idea? Because it wasn't someone who knew what chili's all about.
