I graduated from my BFA program in Dec. '08. Since then I have been working multiple part-time jobs in whatever I can get, but nothing is really what I want "to do"-- I am underemployed but I am very glad to be employed at all

Full time academic jobs that are usually tenure track have health benefits. Adjunct jobs, which is what a lot of people end up getting because colleges are hiring more and more adjuncts instead of tenure track professors, do not have health benefits and often do not pay well at all. So don't let the possibility of insurance be a deciding factor, it is far from a given in academic jobs.
I'd say that unless you want to teach, an MFA may not be that helpful to you.
