taking grad level courses to boost chances of admission

I know that some people consider taking graduate level courses to help build up their application and show they can do grad level work. I've been out of my undergrad for a little while, and have been considering taking one or two at the local university. Since the general consensus is that research looks the best on your application, does anyone know of ways to get research experience when you've already graduated from college?

In my field, I've done searches for research internships. Many of them are asking for people who already have an undergraduate degree and are planning on going to grad school in the future. You may also be able to get in touch with the career center at your former school and see what they can help you with.
