Lovely and sweet! There's a lot of eight canon I don't know, but the amnesia and their relationship work within context of the story, so it seems to deepen my grasp of what the Canon should look like.

Their emotional connection is canon for me at any rate, so I very much enjoyed this story. Your characterization of eight makes it seem like this was a golden interlude for him especially considering what was to come.

As for their emotional connection, I'd say it's pretty established canon, what with the kissing and the hugging and the worrying and Fitz talking about meeting the Doctor as "meeting someone special", and actually, canonically admitting that he loves him and - even - wants to have sex with him.
