I was low on groceries, low on ideas, and hungry, so I needed something quick to do with the thawed chicken breasts and whatever was available in fridge or cupboard.

Here's what I came up with, and it was surprisingly good. Pretty low fat, too, and not too bad on the carb side.

Boneless (and skinless), but I think bones would be fine, too -- just bake longer.

(my MIL buys our chicken at Costco in huge amounts. We cut it up and freeze in "dinner" or "lunch" bunches)

I'm sorry it took me so long to get back here and write to you. My head was so big I couldn't fit into the room with the computer and I had to wait until the swelling went down :)
