Mead 2.0

Finally getting around to this. Bought 12 lbs of honey from a merchant in the Pike Place Market, although a different merchant this time around. Just heated up the water and added the yeast nutrients. Once all the honey was dissolved, I added 5 campden tablets and started the yeast starter. I will be pitching the yeast tomorrow, as well as regularly checking the ph of the mead.
