Dinner, 03/27/2009 - Curried tuna & tempeh sandwiches

It's been a while since I've posted one of these, so here you go!

For Friday's dinner, I made my classic curried tuna & tempeh salad sandwiches, with broccoli sprouts. I used a little less curry powder than I normally do, so it didn't pack the heat it usually does, but it was still quite good.

Hmm. The only tempeh I've ever used was flavored with lemon, and it was because I was not eating meat at the time. It's never occurred to me to mix it up with animal proteins... how did you come up with the combo?

I do make a curried tuna (or albacore) salad fairly often. I love adding toasted sliced almonds and bits of Granny Smith apple to it.

Your chili sounded pretty experimental (and good!)... I didn't know you were into cooking. Yes, please, do post more of these!

It's the same basic concept as adding the almonds. I get regular tempeh, dice it into small cubes, sautee it in a little butter or coconut oil until it lightly browns, let it cool briefly, then add it to the tuna salad mixture. Then I add curry powder until the flavor is right.

I came up with it after an NPR story that mentioned the curried tuna. My brain called for tempeh!

Oh, and there's a local pizza place that had lemon tempeh as a pizza topping for a while. It was awesome.
