I did make these for dinner tonight, and I have to say that they are really yummy.

But you know how the first crepe always goes to the dog?

Um, yeah.

It's extremely tricky to fry and flip an egg on top of a tortilla. But I learned a lot, so the next time, it'll go easier.

Yah, well, what I made are basically the same thing, except the egg is fried on top of the tortilla with the bit of cheese, so it's all of a piece.

Your way definitely sounds simpler, but I have to say I enjoyed the challenge of actually getting those things turned without breaking the egg yolk.

As for the stuff I put on them, it's pretty much a matter of what you like on them, isn't it? The salsa fresca is just a fresh form of the picante, and I like black beans and avo and sour cream with anything Mexican...or pseudo Mexican!
