Your way definitely sounds simpler, but I have to say I enjoyed the challenge of actually getting those things turned without breaking the egg yolk.
As for the stuff I put on them, it's pretty much a matter of what you like on them, isn't it? The salsa fresca is just a fresh form of the picante, and I like black beans and avo and sour cream with anything Mexican...or pseudo Mexican!
