Low Fat Chewy Fruit Oatmeal Bars

Ingredients
3/4 cupFirmly packed brown sugar1/2 cupGranulated sugar8 oz.Vanilla or plain low-fat yogurt2Egg whites, slightly beaten2 tbsp.Vegetable oil2 tbsp.Fat-free milk2 tsp.Vanilla1 1/2 cupsAll-purpose flour1 tsp.Baking soda1 tsp.Ground cinnamon1/2 tsp.Salt(optional)3 cupsOats (quick or old fashioned, uncooked)1 cupDiced dried mixed fruit, raisins or dried cranberriesPreparation

1. Heat oven to 350 degrees. In large bowl, combine sugars, yogurt, egg whites, oil, milk, and vanilla; mix well. In medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add yogurt mixture; mix well. Stir in oats and fruit.

2. Spread dough onto bottom of ungreased 13x9 inch baking pan.

3. Bake 28 to 32 minutes or until light golden brown. Cool completely on wire rack. Cut into bars. Store tightly covered.

My Notes:  These can be further adapted into an even healthier recipe.  Instead of 1.5 cups of all purpose flour, I use half of a cup and one cup whole wheat flour.  I use soy milk as opposed to regular milk, and I totally omit the vegetable oil and use two tbsp of applesauce instead.  The granulated sugar can be replaced with Splenda or an equivelant subsitute.  Sugar in the raw can also be used.  I don't add any salt, and I use the bagged dried tropical fruit with pineapple, papaya, mango, and banana.

These are amazing yummy, very easy, and they make a great snack or even a breakfast on the go.
