What I had on the grill. I made a puree of bacon, herbs, shallots and garlic then piped in under the skin and smeared on in the cavity. The roll is pork tenderloin pounded out and filled with chard, kale, apples, almonds, mushrooms, assorted hot and sweet peppers, onions and cheese rolled and tied. Thanks!!! I managed to check the chicken at the perfect time the exact temp I wanted. Every thing turned out great posted some pixs of the pork tonight as well.
