What I had on the grill. I made a puree of bacon, herbs, shallots and garlic then piped in under the skin and smeared on in the cavity. The roll is pork tenderloin pounded out and filled with chard, kale, apples, almonds, mushrooms, assorted hot and sweet peppers, onions and cheese rolled and tied. It's delicata squash and it is stuffed with a mix from both meats. I kept some of the bacon mix out because I planed to use it, then I had some of the greens left as well so I put them together. The chicken came out perfect, squash was wonderful, have not had the pork yet. It will have a roasted red pepper sauce on it.
Thought I would add an up date about the pork roll that I had on the grill with the chicken.I served it with a roasted red pepper sauce on it. I made potato pancakes with sweet and regular potatoes added some roasted garlic, herbs, smoked & dried red bells and sour cream with more sour cream on top. Mike said this is the best roll I've made yet.
